A distinguished, balanced & quaffable, Ontario-grown, sweet vermouth.  Known for combining farm-grown and foraged fruits to create wines, ciders & hybrid beverages, Revel is without a doubt one of the most interesting (and delicious) projects in Canada. ‘Whistling in the Dark’ is a partially foraged concoction, made from apples, cherries, grapes (tart and aromatic de chaunac and floral, spiced gewürztraminer), blueberries, cane sugar, liquorice-y anise hyssop, tarragon-y yarrow, sage-y wormwood and vanilla-y sweetgrass. Think bitter bending to sweet, gewürzt acidity, a bushel of flowering mint, reduction of cherry koolaid, herbs dipped in honey & the texture of a faun’s spotted back. Enjoy a splash while awaiting a lover’s call, on ice before they come over, and mixed into a negroni as they rest on the couch.
