A lovely pet-nat, aka ancestral method sparkling wine that glitters like a pearl-adorned disco ball. Dreamer and Catalonia-born, natural winemaker Ferran Lacruz farms 8 hectares of organic and biodynamic vines in the small village of Sant Marti Sarroca. Working exclusively with local grapes and wild yeast in an effort to showcase what his land is capable of — in a region where most farmers sell their fruit to conventional winemaking operations forever to be lost to #bigblends. These Xa-rello grapes are pressed to stainless steel tanks for most of their fermentation then transferred to bottle just before fermentation is finished to create happy little bubbles. The wine is held in bottle and later disgorged (the process of removing sediment from the bottle by utilizing its own built up pressure) and is re-corked without sulphur. Balanced yellow tree fruits swing in fields of sourdough pastry, finger lime mineral water & honeysuckle.
