Mentoring under Richard Gonano, lead chemist of Aesop and hair-product maker Kevin Murphy, Trotman approaches wine alternatives in an experimental fashion. NON implements perfumery processes roasting fruits, creating jam blends with verjus for acidity and baked spices for bass notes. Stewed and caramelized cherries give us full frontal fruit in this sparkling red. Cold brew is blended to perform tannic support duties and bloomed spices gift a complex savoury foundation.
