Two expressions of moscatel de alejandria, PipeƱa was aged for almost a year between oak barrels, old amphora, and fiberglass, a thin layer of yeast known as āflorā developed on the surface, adding complex, oxidative notes. Tinja is fermented and aged outdoors in amphora (tinaja), with whole bunch maceration for six months creating a plush viscosity perfect for leisurely sipping.
