Like a drinkable scene from fantasia. Christophe is a dedicated viticulturist, and although he follows organic and biodynamic practices - using biodynamic preparations and following the lunar cycle - he refuses to adhere to any standardized required for certification (cuz that’s what rock n’ roll is, it’s saying no to the MAN!). Mignon is famous for his dedication to the Pinot Meunier grape, which dominates his small 6 hectare estate of primarily clay-limestone, characteristic of the Marne Valley, but here he uses all three of Champagne's most famous grapes. While he generally he ferments in stainless, which you see in his classic ADN Brut Nature, this is one of the few wines that he ages in old wood for a year to develop dense complexity. Permeating fruits, fresh and candied, sweet pea blossoms, rich dough, mellow spices, almond meal, & Samantha Jones saying “FABULOUS” so excitedly you think she may just erupt into a plume of Prada & vodka. Pour alongside Vivaldi mornings & homemade french toast.
