A vivid yet refined aligoté from the veritable aligoté cradle of life. Domaine Didon is a breathing example of what raising the agricultural bar in Burgundy can produce. Together, winemakers Naïma and David biodynamically tend their two hectare estate in Chassey-le-Camp, known as Burgundy's exclusive aligoté appellation. FUN FACT! After beginning in arboriculture at the age of 20, David devoted his life to biodynamics! 35-year-old vines crispy aligoté is whole bunch fermented with zero additions or subtractions, for the purest expression possible. Hawthorn, Pizzelles, thyme soda, swiss chard highlights, seashell minerality, thunder over a lake, candied lemon rind & floral papple (yes the pear, apple hybrid) slices. Enjoy with shrimp n’ grits.
