A bright, aromatic and rare, zero-zero gem from a young producer who should be on your radar! Winemaker Bastian Wolber’s resume is teeming with royalty, from Domaine Bizot and Domaine Leflaive in Burgundy, to Jean-Marc Dreyer in Alsace (excusez-moi??), before starting his label in 2016 while recovering from a skateboarding injury sustained during harvest at the (also FAMED) Domaine Ganevat. Today he works as a negociant (grape buyer, not grower) under the Laisse Tomber label, where he is able to experiment consistently, sourcing grapes from diverse regions like Savoie, Burgundy, Alsace and Baden, Germany. FUN FACT! Bastian’s brother Christoph's natural wine label is the ever-tasty German star producer Wasenhaus! Harvested by hand, the whole bunches of pinot noir and gamay grapes were semi-carbonically fermented to amp up the juice and aromatic factors before being aged in oak barrels on lees for one year to settle like a horse into its stable. Wild strawberries after a rain, raspberry, a shower of black pepper and soil, lightly smoked black tea leaves, violets & tail wagging tannins. Pour alongside a simple but practically perfect margarita pizza and balsamic vinaigrette dressed salad.
