A salty, unique and rare white Burgundy for those whose favourite Rolling Stones song is ‘Wild Horses’. Winemaker Bastian Wolber’s resume is teeming with royalty, from Domaine Bizot and Domaine Leflaive in Burgundy, to Jean-Marc Dreyer in Alsace (excusez-moi??), before starting his label in 2016 while recovering from a skateboarding injury sustained during harvest at the (also FAMED) Domaine Ganevat. Today he works as a negociant (grape buyer, not grower) under the Laisse Tomber label, where he is able to experiment consistently, sourcing grapes from diverse regions like Savoie, Burgundy, Alsace and Baden, Germany. FUN FACT! Bastian’s brother Christoph's natural wine label is the ever-tasty German star producer Wasenhaus! This stunning Bourgogne Blanc comes from the village of Plottes in the Mâconnais. The chardonnay vines were planted in the 1970s on the limestone plot and cared for (uncertified) organically. FUN FACT! This is a declassified Mâcon village that our beloved GWI producer Pierre Mang resides in if you want to explore more from the region from an adventurous perspective! The grapes were crushed, pressed with a basket press for 2-3 hours, and aged for 24 months in large, used oak barrels to bring this angelic beauty back to the earth. Salty lemonade, mustard flowers, petrol, yellow peaches and pears stuffed in buttery puff pastry, beeswax & ancient castle wall minerality.
