Composed mostly of the 2018 vintage with a splash of 2017, this was fermented in used French oak before a year-long secondary fermentation in bottle. Ripe and rich baked apple nose, lemon zest, pineapple cream pie, lime pith, the pearly inside of an oyster & fine, frilly bubbles. Pair with whitefish poached in Szechuan pepper-infused oil or a quarter-slice of apple pie with an enormous dollop of salted whipped cream on top.
