Mathilde Savoye is an admirable young winemaker fresh to market who founded her 3.4 hectare winery in 2017, with the desire to break away from her family’s traditional winemaking style in favour of more sustainable practices. Pinot meunier, known for its relation and similarity to pinot noir, is the focus of the region as it is perfect for this micro climate of oceanic meeting continental influences. The soils are characterized by silt, clay and sand, which creates softer and fresher Champagne. Here we see a blanc de noir (white wine from red grapes) made from 55-year-old vines of this exceptionally elegant grape. Left on lees for 18 months to infuse fragrance and body, this champers is one for the books. Yellow pulp, billowing white flowers, dissolved chalky minerality, walnut skins, simultaneously crisp and round, a tension you could only cut with a sword plucked from a stone. Pour alongside champagne birthdays or watching the first buds of Spring erupt from their sleep.
