It has been said that drinking wine from these small Italian villages is as rejuvenating as gulping down fresh spring water after a lengthy hike, and we can’t imagine feeling any differently. Ermes Pavese is the grower and winemaker of the small-scale farm, completing all the farming and cellar work with the assistance of his family. FUN FACT! The only grape Ermes works with, and the only variety permitted in the Blanc de Morgex et de La Salle DOC, is PriĂ© (pronounced “pree-AY”) – known for its thin skins & delicate herbaceous-ness. These ungrafted vines are interspersed between the family’s vegetable gardens, in tiny, hand-farmed parcels rooted in a crosshatching of romantic stone terraces dating back to the 1600s! After fermentation, the grapes see 12 months of maturation with a consistent lees stirring schedule that adds lustrous texture & creamy complexity. Whipped citrus butter, lime blossom, alpine herbs, honeydew, honey from a stone, nectarine cream, straw, bitter almond & white pepper. Try with raclette!
