'Bourgogne Hautes Cotes de Beaune Blanc'
Chardonnay, Burgundy, FranceÂ
A pristinely classic, rare and wondrous chard. A very small Burgundian winery in a sea of small Burgundian wineries, Vincent Dancer was said to be a reclusive perfectionist with wines worth coveting, and since 2000 his son Théo has taken over and made some noticeable changes. From the tippy-top of the vineyard, the organically tended chardonnay rests on dense limestone soils that bring starlight acidity. Aged in used barrel for 12 months and tank for another 7-8, there is no stirring of the lees which perpetuates the clear, crisp direction ahead. FUN FACTS! Dancer was the first producer in Chassagne to become certified organic, and there are very few others who are certified today. PLUS! Only 850 bottles of this were produced! Spilled wax, rushing minerality, lightly buttered challah, button mushroom & fleshy yellow plum acidity. Enjoy while hanging your bedsheets to dry.
