From a special vineyard in Niagara, where cool air is held between the escarpment and lake, cooling the fruit and allowing for longer time on the vine, aka more flavour development â a VERY special phenomenon! FUN (and hopeful) FACT! Paradise convinced farmers Paul and Josh to convert this tiny old-vine parcel of cab franc to organic treatments in 2021, which moved them to pursue the organic transformation of nearly their entire property! Lazy leather, cacao dusting, freeze-dried raspberry chocolate, green stems, dried tomato, sweet peppers & crumbling chalk tannins.
