Founded in 1900, Cantillon was originally one of hundreds of breweries until it became Belgium’s only brewery in the 2000s, specializing in lambics – spontaneously fermented, aged beers made in open vats called coolships. These beers are so widely coveted, there’s even a day devoted to them – Zwanze Day, on September 25 – where beer buffs around the world pop the most experimental Cantillons they can find. Made from a blend of 1, 2 and 3-year-old organic lambics, this hazy orange beer is a fruity, funky & slightly woody technicolour dreamboat of a drink. Notes of white grapefruit, preserved lemon, oxidized golden apple and hay mingle with a soft, leathery fizz & a green, lactic finish. One of few beers worth aging, save this esoteric treat for off-beat BBQs and beer bros in desperate need of blown minds.
