Dainty in its stationary nature, like a white, pleated skirt laid across an ironing board. Founded by Stéphanie Courtault and her husband Vincent Michelet, the winery now includes 27ha of exclusively Chardonnay vines. The grapes are picked from 30-40 year old vines, fermented in stainless steel where they are allowed to go through malolactic fermentation (think round and creamy) & aged on fine lees for 10 months, adding further roundness. A pale, golden robe, bergamot, lime flowers, fresh bread, orange oil & a well integrated, salty-mineral finish. Drink alongside a breakfast smoked lox bagel & have a great rest of your Wednesday!
