Like someone you love showing you their favourite movie and watching as you watch their favourite parts ~ and now maybe it’s your favourite movie too. Committed and accomplished winemakers and enologists, Alice and Olivier de Moor reside in the small village of Courgis just seven kilometres southwest of Chablis, with nine certified organic hectares spanning the surrounding area. From 30+ year old rich & rippin’ chard vines. A single vineyard bottling from a prized one hectare parcel on classic kimmeridgian soils, made complex by eroding slopes, portlandian rock & a fistful more clay than their other plots. This Chablis underwent a long fermentation (including creamy malolactic) before 11 months of lees aging in an old cellar under Olivier’s grandparents house, giving us a pronounced deer-antler-velvet mouthfeel and bready inflections. Winnie the Pooh’s honey jar, lime oil, golden apple curd, flintstone friction, lemon electrolyte jello shot, salted butter on toast & solar energy warmth. Pour alongside tuna sashimi with wasabi & pickled ginger on the side.
