A floral, fruit-spiked, but mineral centric Chablis for seasonal summer fare. Montreal born, globally experienced winemaker and lively Chablis force since 2008, Patrick Piuze hunts down old vines from top notch growers and picks the fruit by hand himself! Patrick’s focus is on expressing land, grape and year, quoted with saying, “I think the monks got it right”. Sourcing a good portion of sustainably farmed fruit, all of his bottlings are seizing at the unique aspects of the region and putting them on display for us. Lemon poached pear, toasting almonds, fallen tree pollen on cement, flower adorned honey cake, iodine & unlocked garden gates of reduction. Enjoy with panfried scallops, or water buffalo and squash blossom pizza.
