A poised, punctuated and model Chablis for the agesā¦all the ages! ChĆ¢teau de BĆ©ru has been operational for over 400 years! Located on the southern escarpment of the BĆ©ru Valley, their wines pull from the famed Kimmeridgian soil (think high limestone content and fossilized marine organisms galore), and represent the regions signature minerality with a rich aura to back it up. Today the domaine is managed by mother and daughter team Laurence and AthĆ©naĆÆs, who carefully tend the prized land with biodynamic and organic methods, horse plowing and hand harvesting. FUN FACTS! The domaine was previously noted for its vineyards by 9th-century monks, as well as being well-regarded during the Middle Ages, where their wines graced royal tables! Referred to as the most complex wine in the range, the single chardonnay block for āMonopoleā was planted in the 1980s. Grapes were picked by hand and left as whole bunches for a long, gentle pressing to pull the finest of textures. The wine was left unfined and unfiltered, spending 18 months in demi-muids, a year in casks, and six months in bottle before releasing to calm its all-natural prowling potency. Sugared grapefruit for breakfast, puff pastry ease, oyster shack, kelp forest, bletted quince, night blooming jasmine & thyme shrub. Age a few more years if youāre so inclined and enjoy with fried soft-shell crabs and caper mayo.Ā
