A structured, aromatic and perfectly spiced iteration of Piedmont’s most famous digestif. GWI’s first aperitif and digestif producer is here, ciao Chianti Vergano! Tomasso and Pietro Vergano are second-generation makers who have taken over the business for their uncle, concocting small batches of complex and unique elixirs in the backstreets of Asti, Piemonte. Traditionally made with aged Barolo, this mixture borrows its name from the bark of the cinchona, or ‘China’ tree, which is the STAR bitter botanical of this glorious digestif. Vergano prefers to use a younger, gentler and more perfumed wine base from Barbaresco, while the cinchona bark adds tickling tannins, and cinnamon, clove, cardamom, coriander, bay leaf, ginseng & rhubarb provide multi-dimensional character and nuance.
