Like a beautiful and passionate scientist studying Astacology (the study of crayfish), urgent & intriguing. Located at the top of the hill of EpirĂ©, the highest & windiest, point of the famed Chenin appellation of SavenniĂšres. The subsoil is made of brittle schist with a topsoil of aeolian sands (sands that have been moved by the winds) growing starkly mineral wines we hold so dear. These soils, along with the river at the foot of the sloping vineyards, lead to a very early ripening period, after which they are gently hand harvested (they have very thin skins!), fermented in 400L barrels, and aged on their lees for 15 months â for an integrated, textural & bewitching Chenin. Fresh white flowers, dry bouquet garni, honey drizzled quince, valerian, saline tinged finish & texture like a pair of snug raw silk underwear â holding airy tension.
