An aromatic, herbaceous and concentrated, zero-zero, old-vine trebbiano for history buffs. The Mattioli family behind Collecapretta have resided in the small village of Terzo la Pieve, once called Collecapretta, or hill of the goats, since the 1100âs! They have been cultivating the rough, iron, calcium and limestone-speckled hillsides of southern Umbria for generations, and now tend to eight hectares of farmland and vineyards flanked by the Apennine Mountains. FUN FACT! Only compost coming from their own animals is added to the vineyards, not a single other insertion or intervention. Their âVigna Vecchiaâ is made from ancient 95-year-old trebbiano spoletino vines, a beloved, but under studied trebbiano only found in Umbria and known for its later ripening, resistance to botrytis and higher acidity. Picked by hand, direct pressed and fermented in open-top vats, the level of concentrated and honesty of expression present in this bottle is something you donât want to miss. Herb infused honey, German chamomile and lily of the valley, underripe peaches, fennel seed, orange blossom, a beeswax texture, salty stones, white balsamic & apricot syrup. Pour alongside fennel sausages and a zippy winter purslane salad.Â
