A swanky bubble that’s lookin’ to blow that family inheritance on nothin’ but a good old time. The biodynamic wines of Bénédicte and Stéphane Tissot are some of the Jura’s most prized & polished. A blend composed of mainly round, rolling Chard (50%) that is punctuated by fresh Pinot Noir (40%) acidity for harmony and proper tension – solidified by perfumed Poulsard (5%) and berried Trousseau (5%). Tissot works with as minimal cellar intervention as possible, and great care in the vineyard – their vines even drink beneficial herbal teas! Wafting, warm walnut biscuits, fallen heaps of golden delicious apples, floral oils, poached white peaches, a dandy-lion strut & a lemon twister of grinning acidity.
