A floral, round white with green herbs that coax & glittering acidity that nips like jaws a snapping. Brand new to Ontario, chefs turned winemakers Emily Campeau and Christoph MĂŒller are all about polyculture cultivation, gustatorily significant ferments & creative, almost recipe-like assemblage. From four different plots, the aromatically gifted sylvaner is macerated for four to five days for a bit of texture, but mostly to soften the notoriously pectinous skins. The name is plucked from a Royal City lyric, a Kingston band that was happy to oblige this evocative name when Emily connected with the lyric âmy beloved you are a snapping crocodileâ. Tinned mandarin, Bartlett pear, German chamomile, plucking borage, apple juice smell & a hand woven garland of bitter herbs to ward the evil away. Enjoy while engaging in a mid-day campfire sing-along.
