A crispy and classic Chablis at its best for treating yourself! Both from winemaking families, Céline and Frédéric started their own project in 2013, which today consists of 50 hectares mainly planted to chardonnay with sprinklings of sauvignon blanc, aligoté and pinot noir. They work on the classic Chablisien soils of kimmeridgian limestone-clay, formed during the Jurassic period and imparting these wines with their signature taut minerality. From 40-year-old chardonnay vines, the grapes were gently direct pressed for fermentation (including rounding malolactic fermentation) and aged in stainless steel to preserve freshness. Citrus juices, jasmine vines, dried seaweed, with peach roundness, green apple & ever-present chalky minerality. Pour alongside potato and goat cheese pierogis.
