‘Txakoli Doniene’

Hondarrabi Zuri, Basque Country, Spain

A zippy, rip-roaring white perfect for doing the Suzie-Q to The Beach Boys. Doniene Gorrondona is a sustainably focused winery located in the coastal town of Bakio, focusing on the reinterpretation of tradition & expression of their unique Bay of Biscay environment. Persistent winemaker Itziar Insausti has been a pioneer in the region since 1994, taking her land and wines to fantastical new heights. Hondarrabi zuri (on-da-rabbi zorry) is the main grape variety used to make the regionally unique & crisp style wine from the Basque region of Spain known as Txakoli (cha-ko-lee). FUN FACT! This area is considered the birthplace of txakolina wine in Bizkaia! After being hand-cut, the grapes are sped back to the winery, pressed and fermented in stainless steel to keep scents lifted, then left to rest on lees, adding a tender mouthfeel. Green apple crunch, salty limeade, grass, arugula, melon + fennel salad, apple blossom & disintegrating statue minerality. Pour alongside pond hangs and counting how many frogs you see.
