In Ontario for the very first time, chefs turned winemakers Emily Campeau and Christoph MĂŒllerâs creations are singularly hatched from the carefully tended mix of both beloved and lesser known German grapes. From a precious 14 rows, the difficult to grow, or âpain in the assâ - Emily, berry-driven pinot meunier is fully destemmed, left for 10 days on the skins with gentle punchdowns (keeps all the skins wet without disturbing them too much) and giving coteaux champenois like thereâs no tomorrow. Laying in warm laundry fresh from the dryer, balanced by cool herbaceous greenness, potpourri dish, currant juice, antique wood nut cracker & fruit caramels. Enjoy with big, bean, cowboy chillis, and scanning the sky for constellations.Â
