An earthy, properly fruited German red that reads like a classy and finessed pinot noir with a sparkle in its eye. In Ontario for the very first time, chefs turned winemakers Emily Campeau and Christoph MĂŒller’s creations are singularly hatched from the carefully tended mix of both beloved and lesser known German grapes. From a precious 14 rows, the difficult to grow, or “pain in the ass” - Emily, berry-driven pinot meunier is fully destemmed, left for 10 days on the skins with gentle punchdowns (keeps all the skins wet without disturbing them too much) and giving coteaux champenois like there’s no tomorrow. Laying in warm laundry fresh from the dryer, balanced by cool herbaceous greenness, potpourri dish, currant juice, antique wood nut cracker & fruit caramels. Enjoy with big, bean, cowboy chillis, and scanning the sky for constellations.
