Cinzia and Fausto Cellario are third generation winemakers, fermenting away in the western outskirts of the Langhe. They choose to exclusively work with organic farming practices and regional Piemontese grape varieties, while fiercely defending the local winemaking traditions they grew up with. De-stemmed and aged in stainless steel to keep aromatics flying, this wine also possesses a gentle effervescence on first-open that seems to propel the sweet scents right up your nose and into your brain - think Vinho Verde style. Toasty citrus, orange blossom honey, slate minerality, hay, a whole green apple branch, green papaya & a creamy ginger mouthfeel. Enjoy with olive oil and lemon zested pasta.
