Cabernet Franc, Loire Valley, France 

Winemakers EmĂ©line Calvez and SĂ©bastien Bobinet hit a home run yet again with their precise and expressive Loire cab franc. A parcel-based wine, coming from their oldest (70 year old!) organically tended vines, grown on the typical clay-limestone soils of the region. This wine only exists in very good vintages, otherwise the grapes are blended with those of ‘AmatĂ©ĂŒs Bobi’. ‘Echalier' grapes are 100% destemmed, see a 35 day maceration & are only bottled after 2 years of ageing to make sure the wine has time for some R&R gaining complexity and integration. Dense, velvety undergrowth, drying hay bale + stables, pits of capsicum, sandy wet Earth, wild raspberry acidity, purple pencil crayon & voluminous cherry clouds. Try with Salt Spring Island goat cheese & fresh herbs.
