An aromatic, mineral and tactile rare Hungarian white blend for those with big dreams. RĂłbert Gilvesy returned to his familyâs Hungarian homeland after growing up on a Canadian farm. He started Gilvesy from a cellar dating back to 1680 and now organically farms 10 hectares in the breathtaking region of Lake Balaton shaped by six million year old volcanoes. Grown on eroded basalt soils, the blend for âSt. Georgeâ inlcudes regional favourites like orchardly riesling, spiced olaszrizling and citric, mineral furmint. Grapes were direct pressed and fermented between steel tanks and Hungarian barrels for a balance between roundness and lightness. Limeade, acacia flower, white pepper, petrol, grapefruit pith, last of the season white peach, a salty volcanic mineral pull & beeswax tactility. Pour alongside a citrus packed conch and tuna ceviche.Â
