An aromatic, juicy and mineral hidden gem volcanic red that is SO DANG DELICIOUS that we simply do not trust anyone who doesnât agree! Now on her fifth vintage, winemaker Sonia Gambino works on Mount Etna, Sicily, tending to ancient parcels of regional vines. The project is dedicated to her grandfather, nicknamed "Gustinello" by locals, as he had once run the village's palmento, a communal winemaking facility where residents brought their grapes for processing. âJungimmune Rossoâ is a blend of primarily berried and spiced grenache, coupled with grapes from centenary vines of tart, mineral nerello mascalese, plus earthy corinto nero and a few other vines not yet fully identified, #mysterious! FUN FACT! Grenache has been present on her side of Mt. Etna since the mid-1800s when it was brought over from France! The grapes were harvested by hand, destemmed, gently crushed and macerated on the skins for 25 days to pull tactile tannins and a succinctly collaborative expression. The wine then aged for twelve months between steel, cement and demijohns for a mix of softening and maintaining freshness, followed by eight months in the bottle before reaching our eager tastebuds. Gorgeously perfumed, pomegranate, sweet spice sprinklings, morello cherries, tender tannins, dried tarragon, blood orange, grandpaâs hug & a smokey, volcanic minerality. Pour alongside caponata, pani cĂą meusa or couscous alla trapanese.Â
