‘La Charbauterie’

A layered and joyful stunner from one of Champagne’s rising stars! Hélène Charbaut is a 4th genertion vigneron in the Vallée de la Marne. She completed her wine management degree in Dijon, where she became so enthanted in biodynamics that she made it the subject of her dissertation! Now she farms around 3 hectares of wines in three premier cru villages. In each she grows a single grape: chardonnay in “La Crayère”, pinot noir in “La Pirouette’, and pinot meunier in “La Meunière”. Her “Charbauterie” is a combination of all plots, aged for 9 months in barrel before 18-24 months ageing ‘sur lattes’ gaining texture and complexity. There is no finining, filtration, dosage or S02 addition at any point in production. Grilled apple, the season’s first raspberry, lemon pith and wafting dough. Héléne’s first vintage was only 2020, and we can’t wait to follow her promising career sip to sip!
