Here, the groves of ancient olive and almond trees break the wind off the sea, exhaling their cooling effect on the grapes. The grillo is hand-picked form 15-year-old vines, and sees two days of skin contact to pull aromatics and gentle texture before 18 months in concrete tanks. FUN FACT! ā€˜Ponente’ was named after the wind that blows from the west to the east across the island and helps to remove humidity and keep grapes naturally healthy! Freshly cleaned pool, lees, fresh cream lactic lustre, a box of cake ice cream cones, pecking lemon acidity & sandcastle structure.
