Istvan Bencze, or âPiĆĄtaâ as he is affectionately called by natural wine legend Zsolt Suto of Strekov 1075, is an up-and-coming winemaker based on the northern shores of Lake Balaton - the largest lake in central Europe. Bencze is a former I.T. entrepreneur who felt the pull of his grandparentsâ winemaking legacy in western Hungary. He is deeply committed to organics (since starting out in 2011) and biodynamics, zero sulphur additions and no filtration. While he works with both regional and international grapes, everything he does is in pursuit of freshness through bright acidity and saline minerality. Fermented with a bit of skin contact and aged in amphora as well as large, old Slovenian barrels, Benczeâs riesling is round, textured and yet somehow like chewing on multivitamins. Think apricot, lemon, apple and fall leaves wrapped around a tight, fresh core - you know your body just needs this health juice.
