A delicate, crystalline and extremely HARD TO FIND white Burgundy to age and cherish. After working with Jean-Marie Guffens and Jean-François Ganevat, young winemaker Jessica Litaud returned to her family estate in the MĂąconnais, and today works five hectares of old, organic and biodynamically tended vines in top vineyards – including some of Pouilly-Fuisse’s 1er Crus! ‘L’apero Vin Zou’ is a blend of the second pressings from all the estate's wines as well as the nĂ©gociant (purchased) fruit (with the exception of the three Premier Crus), that spent twelve months aging in old oak barrels to bring about some serious bonding time. White wisteria and gardenia, citrus skins, pulp and juices, white pear, gossamer vintage silk, seashells & a vibrating minerality. Pour alongside fresh lettuce wraps stuffed with cucumber, avocado, carrot, radish and firm tofu, with a spicy peanut or almond sauce to dip.
