The brewery is committed to preserving nature and brewing Junmai, meaning pure rice or non-additive sakes using Shizenmai (fertilizer and pesticide-free rice) and natural water, as well as the traditional, and longer, Kimoto method (meaning no additions of lactic acid to the fermentation). FUN FACT! They offer âRice Field Schoolâ for those that want to learn how to grow, take care and harvest sakĂ© rice. This Junmai has an 80% polish rate & is brewed in a four-stage mashing process (instead of the regular three-stage process), giving it a rounder & creamier mouthfeel. My oh my, umami & sweetness envelope each other with notes of nutty porridge, radical acidity & textured like 100 year old silk â divine. Pairs well with a pearl choker & gold trimmed suit.
