An incredibly delicious sparkling sake (!) from one of Japan’s most historic brewers, established in 1662. Made in a pet-nat style—bottled unfiltered & left to finish fermenting in the bottle—this fresh & creamy sake is an unexpected delight, ‘a sensory double-entendre’ of crisp bubbles & wine-adjacent acid, kinda like fizzy kefir but made of rice. At a featherweight 11%, it’s light in body & rich on the palate  – vanilla cream, honeydew skin, savoury green herbs, a slight yeasty kick & a salty-savoury finish. Every host’s dream party flavour, you can have so much fun with it – serve it first as a cheeky surprise or treat it like sparkling Muscadet and pair it with oysters & uni, just be sure to have a shucker on your guest list.
