JĂ©rĂŽme Binda is working with some of the oldest vines in the world (some up to 250 years old!) on the Aegean island of Tinos, Greece. Only ancient, crawling bush vines â that is, grown without training â could produce such a deeply wise and powerful white wine with such an intense saffron hue and fresh acid. â10+12â is new to Ontario and refers to a 2015 blend of Vat 10 with Vat 12, early Aspro Potamisi with late Aspro Potamisi â the name clearly stuck. Savoury and slightly salty with notes of preserved & fermented lemon, macadamia, apricot fuzz, wildflower honey, ginger chew, barrel toast and a touch of peat. Take a bit of Saint Tropez, a touch of Miami and a healthy dose of Greek charm and you get this, an entire sabbatical in a bottle.
