A plush, tropical and mineral Hungarian chard with stunning weight and depth! Farming biodynamically since 2018, Kristinus is led by winemaker Florian Zaruba, who keenly follows a holistic, minimal intervention approach all the way through from the vineyard to the cellar. Since 2020, precious winged and four-legged residents have joined the property, as they believe that animals bring soul and complete the circle of sustainability, contributing valuables like manure and food. The chardonnay grapes are destemmed and crushed for four hours for a light extraction of the skins, fermented in tank (80%) and Hungarian barrels, and see a total of six months on lees with regular stirring to bring us a romantic and rich final expression. Honeysuckle, almond and pear tartlette, buttered coconut, pineapple hat, straw bale, grapefruit peels & sprinkles. Enjoy with lobster bisque.
