At the foot of the majestic Schlossberg hill in Alsace, winemaker Catherine Fuller tends to her land biodynamically, producing a prestigious line of elegant and timeless wines. This zipping riesling is just one example from the estate's line of wines with zero inputs or alterations. FUN FACT! The domaine was founded by Capuchin monks in 1612! This particular parcel is located on the south-eastern tip of the famed Mamburg Grand Cru site, with marl-limestone soils that delay ripening and add acidity for truly complex and balanced fruit. Intentionally picked for PEAK aromatic expression, and left for eight months of aging on lees to really lock in texture and fragrance. Mirabelle plum, ripe quince structure, young ginger, rolling beeswax, with luscious tension resting between the fruit and minerality & a dawdling saltiness follows closely behind. Enjoy with veggie sushi & tuna sashimi.
