'The Serpent'

A concentrated, berried and luscious Southern France red blend that is as charming as the label is beautiful. Maya and Nicolas at Calmette work organically and with biodynamic methods to grow the best fruit and show it honestly through gentle extractions and minimal intervention. “The Serpent’ is a 50/50 and beautifully berried blend of malbec and merlot planted between the 1970s to early 2000s on Kimmeridgian limestone and marl bedrock. The grapes were fermented and aged for 12 months on the lees between concrete and stainless steel tanks to keep the grapes characteristics shining bright through their more neutral influence. Plum pudding, blueberry pie and sour cherry fill the room, smoking rosemary, graphite, cocoa pod, pepper & button mushrooms. Pour alongside roast turkey and heaps of gravy.
