Since 2007, winemaker Cyrille Sevin has been producing low-intervention wines from his 10, certified organic hectares in Touraine’s AOC of Cour-Cheverny. FUN FACT! The AOC Cour-Cheverny was especially created in 1993 for the rare and ancient romorantin grape! Cyrille’s 40 year-old romorantin vines (a late ripening child of gouais blanc and a member of the pinot family) grow on sandy soils, are pressed and fermented in tank and aged for 10 months on fine lees. McD’s bag of green apple slices, orange blossom, aniseed, pear hand pie, underripe apricot, rosemary bundle & a childhood fort.
