A truest of true expression of nebbiolo, star grape of the prestigious Piemonte. From the forward thinking vision of two friends, Lara Rocchetti & Luisa Sala (La & Lu = LalĂș), who met while studying at Italyâs top university for gastronomic science. FUN FACT! Their thesis was on designing a carbon-neutral winery! The organically tended fruit is fermented as 1/2 whole berries and 1/2 destemmed to bring some astringency for the rich fruit to sit atop. Tart cherry, dog-rose, anise, with a powerful umami core of leather, sandalwood & seaweed and mushrooms on a beach fire. First time in Ontario and we were instantly charmed. Pair with an extra creamy risotto and the boss in all of us.
