Emmanuel Lassaigne is making some of the most exciting Champagne out of the âsecret gardenâ that is Montgueux, where Emmanuelâs father Jacques replanted some of the villageâs abandoned vineyards. 100% Chardonnay, planted between 1964 and 1967 on the chalky hillside furthest to the east in the Montgueux vineyards. Malolactic fermentation completes naturally, and there is no bĂątonnage for this incredibly balanced & frothy babe. Aged on the lees for 24 months in a combination of stainless steel tanks and used Burgundy barrels (4-20 years old), and hand disgorged after three to five years in bottle. Pearpricot (pear+apricot), daffodil, Lucky Charms, oyster shell, sour-lemon custard pastry, chalkboard eraser, yellow pomelo & salty graham cracker. Open when the sun aligns with the moon, which aligns with the Earth, which aligns with your heart, xoxo.
