The grapes are de-stemmed and gently pressed before aging on fine lees with frequent batonnage (stirring) for 6-8 months. Straw struck by golden hour, blanched almond, white nectarine, sage brush, and lemon zest, acacia flowers & were stones. Enjoy with risotto alla Milanese.
