Fabien Jouves is a fifth generation winemaker working with 21 hectares of organic and biodynamic vineyards in the mountains of Cahors, southwest France. âLes Escuresâ comes from 25-year-old, biodynamically tended vines on an outcropping of Kimmeridgian limestone, the same famous terroir of Chablis! Pulling beautiful freshness and density, these grapes are then macerated for 30 days to pull propelling tannins. BRILLIANT magenta, candied blackberries, tobacco, inky cherry syrup with flowers hiding underneath, and a long walk in the woods with thick tree-rooty tannins wraping âround and squeezing. Enjoy with a crispy goose breast.
