Revered winemaker Julien Guillot introduced biodynamic techniques to his familyâs (already organic) seven hectare estate in 1998, officially taking over in 2001. The vines are all impressively old, surrounded by a magical forest of old growth and ancient stone dwellings. The chard is grown on middle Jurassic bathonian soils (think SLABS of limestone), rich in clay and silica, coming through in droves as they believe it is essential for the geology to be centerstage in each and every wine, well DING DONG DARLING! Tiny prickles of salty effervescence, a silk glove holding your tongue, blended whole preserved lemon, pine-nutty lees influence, whole fat cream, damp matchstick struck over and over again, ground chalk & fossilized dino footprint minerality. Try with a mighty fine quail egg salad.
