The warmer temperatures of Côte des Bar, in combination with its ancient limestone and clay soils— strewn with prehistoric, sea creature matter— give us bare minerality on par with great Chablis, their neighbours to the South. ‘Resonance’ is grown on a biodynamic estate in the village of Polisot, at the southern edge of Champagne. Scientific, spiritual & wholly talented, Dominique uses pendulums to gauge the evolution of her vineyard & cellar – explaining that the pendulum changes its natural rhythm based on the energy emitted from a living being, whether person, vineyard, or wine. A nervy Pinot flushed with veins of salinity. A profile sculpted from smashed marble, fruit stones, jasmine-mint, baking brioche, bucket of spring rainwater, white pepper, cherry blossom branches & underripe peach flesh.
