An intricate, umami-licked and non-oxidative jura chard to keep under lock and key. Pauline and GĂ©raud Fromontâs winery, Marnes Blanche, was started in 2006 as ambitious and passionate 20-somethings, who soon came to be known as "the future of the Jura". #nopressure Together they began with a parcel in Cesancey and over the years have accumulated a total of 15 hectares, including rare, 100-year-old vines in Vincelles and Ste-AgnĂšs. Certified organic since 2013, they use many biodynamic practices and an intentionally limited use of sulphur to let their terroir shine. These are bottles that only recently began coming into the province in teeeeny tiny quantities and we are so lucky to have them! From vines planted in classic marl and limestone and averaging 35-years-old, the grapes are pressed directly to barrel for fermentation, including creamy texture-giving malolactic. Throughout ageing, the barrels are kept fully topped up to prevent oxidation and present a fresh Jura offering. The inside of a beehive, white sesame, mirabelle plum, green apple, chalky grit with a saline sheen, fresh cream, the finest marzipan in all the land circa the early 1800s & a knife pulled from a jar of citrus marmalade. Pour alongside chicken and morels, your bougie younger half-siblingâs 19th birthday (you want them to know how much you love them), or showing someone The Matrix series for the first time.Â
