An aromatic, fruity and fresh-as-a-spring-breeze bubble for Monday night nibbling. Winemaker Pascal Biotteau of Mary Taylor works with small scale, dedicated growers, with the end goal of sharing wines that are reflective of their individually TASTY terroirs. The aromatic, fruity glera (60%) and citric, mineral garganega (40%) grapes come from sustainably farmed, 30-year-old, volcanic and limestone vineyards in the foothills of the Alps, in the province of Vicenza. The frizzante bubbles are a result of the addition of concentrated grape must to spur on a secondary, CO2 creating fermentation. FUN FACT! Frizzante is a lower pressure than spumante, and you can expect a lightly sparkling treat more akin to a pet-nat than a champagne! Jasmine vines, pear sorbet, salt packed lemon peel, creamed honey, white peaches & pitter-pattering bubbles. Pour alongside pu ob woonsen, or baked crab with glass noodles.
