Unlike many others in Burgundy, François Mikulski doesn’t come from a winemaking background. He established his Domaine in 1992 with his wife, Marie-Pierre and without tradition holding them back, they were free to chart their own path, working to elevate classic Burgundian styles with a modern, free-spirited sensibility. And while their wines are famed for their clarity, complexity and precision, always finely calibrated and among the very best in Burgundy, they’re as casual as can be, nothing too precious – just the way they like it! Like a visual remaster of an old black-and-white melodrama, this drinks like something Norma Desmond would slosh around in a modern adaptation of Sunset Boulevard. Fermented in stainless steel, the juice undergoes a second fermentation in-bottle for 12-18 months and is disgorged with an additional liqueur d’expedition to balance the acid and sweetness. Crisp and creamy in equal measure with notes of ripe yellow apple, oyster shell, pomelo rind & grapefruit zest with zesty bubbles, high-falutin’ acid & a salty seaspray finish. No celebration necessary, this is a sparkling wine to pair with life well lived! Or maybe just a handful of oysters & olives, as a little treat.
